As the summer starts to wind down, most families are looking ahead to the kiddos going off to school and busy schedules to resume. I can certainly say that my family is one of them, how about yours? I’ve been eager to find some 30-minute-or-less dinners to have on hand and this 20 Minute Chicken Sausage Pasta fits the bill perfectly! We tend to get “stuck in a rut” with our proteins at dinnertime. Chicken sausage is a great way to change up the flavors of dinner – especially those hectic nights coming up on the horizon. Let’s be ready with some healthier, quick dinners for our families! What’s in this recipe? What goes well with chicken sausages? Anything you would typically use with pork sausage, you can substitute with chicken sausage! Of course it goes well with pasta, but also sautéed with peppers and onions and served on rolls is another favorite dinner of ours. Grilling chicken sausage brings out a whole new flavor profile as well! Can you freeze this recipe? I would not recommend freezing this as a finished recipe, but you could definitely freeze the fresh tomato sauce to be ready at a later time. Just thaw in the fridge overnight before cooking in this dish – though I would argue that just cooking the sauce from fresh tomatoes would probably be quicker! Can canned tomatoes be used? Not in this one! Go for fresh cherry tomatoes, it really punches the flavor of the meal. Fresh tomato sauce is so easy to make, too! Can I use dried basil rather than fresh? Sure! Just sprinkle some extra basil on top of the dish, stir it in, and serve! How to make Chicken Sausage Pasta: Heat olive oil in a large, deep skillet and add minced garlic. 2. Add cherry tomatoes and stir occasionally smashing them with the back of a wooden spoon to release the juices. 3. Add sliced chicken sausage to heat through until internal temperature reaches 165 degrees. 4. Stir in cooked penne pasta and heat through. Serve with Parmesan cheese and fresh basil! What brand of chicken sausage do you recommend? I’ve honestly used several brands for this recipe, but use what is available at your store! I do like the Coleman brand and I generally try to grab that if I can find it. If you can find Italian seasoned chicken sausage, that would make the flavor even better in this meal! Tips for recipe success: Have all ingredients out, pre-measured, and prepared before you begin! Use whatever kind of cherry tomatoes you have on hand. I used a mixture of my homegrown red Chadwick cherry tomatoes and yellow pear cherry tomatoes. For a slight flavor change, try chicken meatballs and cooked linguine for a different twist! If you need to double this recipe, make it in a larger pot – like a soup pot. You’ll need extra space for all those beautiful, juicy tomatoes and the flavorful chicken sausage! Add some additional fresh veggies to really bulk up the meal! Try fresh sliced peppers, mushrooms, yellow squash, or zucchini – delish!
