With root beer in the batter AND in the frosting, it’s a party when this cake is served! You would think, with such a strong flavor such as root beer, that this Root Beer Cake would be almost too strong. Believe me, it’s not! In fact, there is only a slight root beer taste to it, both in the cake and the frosting. I’ve made several cakes and breads over the years with sodas and I really love how the carbonation in these drinks transform a regular dessert recipe. At 9 and 6 years old, our boys really don’t drink soda all that much. It’s really a special occasion drink that they only have when we’re out to eat. Recently I started letting them get a small lemon lime soda or root beer when we’re getting Happy Meals. They’ve really come to love root beer the most, which is really funny to me. It’s definitely my least favorite soda variety! I was a child of the 80’s so I pretty much grew up with Coca Cola in my sippy cup. Ok, maybe not THAT bad, but we had it all the time and I fell in love with the cola flavor. Despite all good other sodas may be, cola will always be my personal favorite. I have to say though, after a slice of this cake I totally understand why the boys prefer root beer. It goes so nicely with the buttercream frosting and it reminds me almost of a root beer float in cake form! Root Beer Cake This Root Beer Cake is such a fun dessert! Add in root beer, flour, baking powder and salt. Beat until well combined.Pour into a greased 8 x 8 square baking dish. Bake at 375 for 32 - 35 minutes or until a knife inserted in the center comes out clean. Cool completely.For the frosting, beat together butter, salt, sugar, and root beer. Add milk gradually until you have a slightly thin buttercream. Pour/spread over cooled cake and allow frosting to set. Slice and serve. Lindsay says March 21, 2022 at 1:40 am The cake tasted good enough, but it was super, super dense probably due to the all purpose flour which I should have guessed. I might try cake flour instead, but I doubt I’d make this again. Reply
