Steamed asparagus with a apple cider vinaigrette, yum! I get so happy this time of the year when I start to see sales on all sorts of vegetables and fruits that are beginning to come into season in my area. Spring will be here soon! I am very excited for spring to be here and to get started on this year’s vegetable garden. One thing I will not be growing in my backyard garden is asparagus, but I wish I could! From my research, they need quite a large area and also quite a lot of patience as they take a few years to be able to harvest. Luckily, I get to enjoy other’s harvests of asparagus! This Asparagus Salad uses steamed asparagus, chilled, with a homemade apple cider vinaigrette. For best results, allow the ingredients in the vinaigrette to combine well overnight in the refrigerator. Drizzle the dressing over the asparagus just before serving! Place a steamer basket or small colander into the bottom of the pot and place the asparagus inside. Cover pot and steam for 6 - 8 minutes or until tender crisp.Remove asparagus from pot into a bowl. Refrigerate to allow asparagus to chill completely.Meanwhile, in a small bowl whisk together olive oil and apple cider vinegar. Add salt and pepper to taste. Refrigerate until ready to serve.Drizzle vinaigrette over chilled asparagus and serve immediately.
