Serve chilled topped with whipped cream and fresh blackberries! I came across this recipe in a VERY old and well worn cookbook I had found in a thrift shop a while back. What in the heck is flummery? Is that what you are thinking right now? Because that’s what I was thinking when I read the title of the recipe! Flummery is a sweet semi set dessert, usually flavored with berries or fruit. After making this blackberry flummery, I would describe it as a cross between a jello and a custard. This particular version of flummery uses fresh blackberries, but you could easily substitute fresh raspberries instead. It was really simple to prepare this on the stovetop, just allow ample time for this to chill to room temperature on the counter, and then overnight in the fridge. It tastes SO GOOD after it’s had time to fully cool down and allow the fruit juices to melt into the sugar. Yum!! Blackberry Flummery This Blackberry Flummery is such a fresh & fun dessert! Heat over medium low heat for 5 minutes. Drain the water and return berries to pan.Stir in remaining 2 1/2 cups water. Whisk in sugar, cornstarch, and salt. Heat over medium heat to reach a boil. Stirring constantly, cook mixture for 5 minutes until thickened.Remove from heat and stir in fresh lemon juice. Allow to cool to room temperature. Transfer to a plastic container and refrigerate at least 3 hours, or overnight. Serve in dishes topped with whipped cream and reserved blackberries.
