Great way to get the kids eating veggies at lunch! I wouldn’t say my kids are picky eaters. I would just say they know EXACTLY what they like and what they DON’T like. Wesley likes raw broccoli, baby carrots dipped in ranch dressing, corn in any form, canned peas, and canned green beans. Silas likes corn in any form, canned peas, canned green beans, and canned carrots. Neither of them like salad at all. Actually, I don’t blame them about the salad thing – I didn’t like it as a kid either. Let’s just say it’s a bit frustrating for me at dinner time! Especially since Paul only really likes raw vegetables, unless I roast them in tons of garlic – which neither of the boys like. Me? I pretty much like all of the above. I’ll even sit and watch TV with a bowl of steamed Brussels sprouts – and all three of them look at me with wrinkled up noses. I know for a fact that packing lunches is going to be FUN this year. I’m very interested to see what comes back to me devoured, and completely untouched. Ha! These roll ups are the PERFECT way to sneak some vegetables into the kiddos’ lunch boxes in a yummy spread without them even noticing. Score! Ok so full disclosure here, there’s NO WAY I’d get away with any sort of lettuce in the boys’ roll ups – so that would be omitted with theirs. Drizzle with olive oil and turn to coat evenly.Spread onto a greased cookie sheet. Bake at 425 degrees for 30 minutes, stirring once halfway through, until veggies are softened. Cool 10 minutes.Place veggies and cream cheese in a blender or food processor and blend until smooth.To assemble roll ups, spread 1/3-1/2 cup roasted veggie spread onto each tortilla and top with 2 slices of ham and a handful of lettuce. Roll up and slice into pinwheels. Keep refrigerated until ready to serve.
