So, today was Silas’ first official day of summer! I can’t believe this guy is done with Kindergarten. I have to say he had a really great year, an amazing teacher, and I can’t even believe the progress he’s made academically just being there every day in the morning. It really blows me away how sponge-like kids’ little minds are! If only I could get him to actually WANT to read for… oh you know… fun?! I recently put a learning app on their tablets, it’s really adorable. They go through lesson and earn tickets to then spend on their hamster cage, aquarium, or “room.” Silas figured out within minutes which lessons took the LEAST amount of time to earn the MOST tickets. Paul had a good long laugh at this. I’m hoping his 1st grade teacher likes his problem solving skills! Oh man, this kid. But, I am definitely looking forward to a summer of vacation and day trips together, waking up late, letting them stay up late at night, and making some great memories. After all, this is the last summer we’ll have with just the four of us! 🙂 This baked oatmeal was a quick breakfast celebration this morning of the first official day of summer vacation. It gave me a few extra minutes to think about what to make, but in reality, this is insanely simple to put together even on the busiest mornings. My boys have really become addicted to the instant oatmeal packets – they’re just so darn quick and easy! And compared to sugar cereal, at least there’s some oatmeal in there – right?! This recipe has only 1/4 cup of brown sugar and makes 8 servings – and the boys absolutely devoured their oatmeal!
