These cookies will instantly make your house smell like a cozy bakery! They are perfect with your morning cup of coffee or tea! I’m not sure there’s anything more comforting than a batch of warm, homemade cookies sitting on a plate in your kitchen. Making homemade cookies is the perfect way to show your family how special they are to you! And I can tell you for sure, they will absolutely adore these Oatmeal Butterscotch Cookies! There’s just one little secret to these cookies that makes them SUPER EASY to put together in a pinch. Spice cake mix. That’s right! No measuring flour, sugar, baking soda, baking powder, or salt needed for this recipe. Just a box of spice cake mix for the dry ingredient list. Can’t get more simple than that! Do I mix the cake mix with the ingredients on the box first? No, you’ll be just using the dry spice cake mix for this recipe. Just ignore the ingredients and directions on the back of the cake mix box. What brand of spice cake mix is used? I usually buy the Betty Crocker spice cake mix, but as long as it’s the 15 oz size, the brand really doesn’t matter. Is spice cake mix only sold in the fall month? Nope! My grocery stores carry it all year around. What’s in this recipe: You’ll need spice cake mix, applesauce, eggs, old fashioned oats, and butterscotch baking chips to make these cookies. How to make this recipe: In a large mixing bowl using a hand mixer, beat together the dry spice cake mix, applesauce, and eggs. Try not to overmix this part! 2. Pour in the old fashioned oats and the butterscotch baking chips to the cookie dough in the bowl. 3. Stir the ingredients together to make sure the butterscotch chips and the old fashioned oats are evenly distributed throughout the cookie dough. This cookie dough is thick but more wet than typical cookie dough. 4. Scoop up the cookie dough with a tablespoon measure and drop the dough onto a cookie sheet that has been lined with a non stick baking mat, parchment paper, or aluminum foil. 5. Bake the cookies in a preheated oven until the edges of the cookies are golden brown. Transfer the cookies to a wire rack to cool completely. Storage directions: Store these cookies in a plastic lidded container at room temperature for 3 – 5 days. Freezer directions: Raw cookie dough: freeze the raw cookie dough in a lidded freezer container for up to 3 months. Thaw overnight in the refrigerator before dropping tablespoonfuls of dough onto cookie sheets and baking as the directions instruct. Baked cookies: freeze cookies in a freezer container for up to 3 months. Thaw overnight in the refrigerator or at room temperature. Can quick oats be used instead of old fashioned oats? I don’t recommend using quick oats instead of the old fashioned oats in this particular recipe. This cookie dough turns out more wet than typical cookie dough and using the extra processed quick oats would just keep the cookies too wet to turn out well. Where can I find butterscotch baking chips? You can find them in the baking aisle of your grocery store. They will be right alongside the other chocolate chips, white chocolate chips, peanut butter chips, and chopped nuts. Can I substitute yellow cake mix for the spice cake mix? I know spice cake mix can sometimes be hard to find in the store! You can definitely substitute a 15 oz box of yellow cake mix instead, but I would also add a teaspoon of ground cinnamon or ground apple pie spice to the mix as well to give it that bit of warm, spice flavor!
