This salad created a bit of controversy in our house when I made it. Wesley refused to try it, because I mentioned that it was called a “salad.” To him, that term usually means “laden with vegetables that I may or may not like.” Paul was of course eager to try it, but commented that it looked a bit like queso dip. Paul wound up devouring his, which I knew he would given the ingredients. Wesley however, DID NOT like the fact that I left the skin on the apple pieces. I actually really love apple skins so this was perfect to me, but believe me I was well informed how to make this for him next time! Whatever you do, do not let the looks of this salad fool you – it is insanely good.
