Every Christmas season my boys and husband BEG me to make these Peanut Butter Chip Cookies! Well actually, they beg me to make any cookies with lots of peanut butter in them. I’m happy to report this recipe fits the bill! Peanut butter cookies with peanut butter chips are the perfect way to satisfy the cravings of the peanut-butter-lover in your life! As an added bonus, these make excellent cookies to store and give away to friends and family at Christmas time. Where can I find peanut butter chips? They can be found right alongside the chocolate chips in the baking aisle. During the Christmas season, some stores might even have a display outside of the aisles with baking supplies as well. I like using Reese’s brand peanut butter chips, but I’m sure store brand would be great as well. How do you know when peanut butter cookies are done? Peanut butter cookies will be SLIGHTLY brown on the edges when they are done. Why are my peanut butter cookies crumbly? Overbaking peanut butter cookies makes them crumbly. Taking them out of the oven sooner, rather than later, is always better for texture! How to make peanut butter chip cookies: In a stand mixer, blend peanut butter, softened butter, and vanilla extract. Add in sugar and eggs. Add in flour, baking soda, and salt. Stir in peanut butter chips. Scoop up tablespoonfuls of dough, roll them with your hands, and place them on lined cookie sheets. Bake and cool! How many cookies does this recipe make? This recipe for peanut butter chip cookies makes between 4 dozen and 4 1/2 dozen cookies (48 – 52 cookies). Can the dough be frozen before baking? Yes! Just thaw, roll and bake when you’re ready.
