Natural peanut butter, flax, eggs, sweetener, and dark chocolate – these cookies are delicious and super healthy! I have a big admission to make to you. I’m addicted to treats. Ok, so maybe that isn’t so much of a huge announcement given that I’m a food blogger, but it’s true! Just yesterday after a kid-free shopping trip to Target (YAY), I pulled into my driveway and sat there finishing my container of miniature Oreos. In peace. Moms, you know what I’m talking about. Honestly though, Paul and I have been doing really good with making much healthier choices with meals. The low carb, high protein, healthy fats eating plan we’ve been following (Trim Healthy Mama – my affiliate link) really does work. I’ve lost 14 pounds and Paul is down almost 20 pounds since the middle of November. Unfortunately, he really doesn’t crave sweets and baked goods like I do! For him, the change has really been cutting out sugary drinks and take out food. For me, though, I’ve needed to really find some healthy replacements for my “sweet tooth” as my dad refers to it. He has one too, guess I know where I got it from! I know I’ll still have my off-plan treats and meals every now and then, which is one of the reasons why I love Trim Healthy Mama so much. It can be restrictive depending on what foods you were previously accustomed to eating, but it definitely allows for off-plan meals on occasion. Just start over again in 3 hours! I definitely need to plan ahead better, though – especially when I have low-carb recipes on hand like these AMAZING Low Carb Peanut Butter Cookies! No white flour and no added sugar in these cookies, either – depending on the brand of dark chocolate you use. I used the Aldi brand 85% dark chocolate, but you could use melted sugar free chocolate chips as well – Lily’s is my favorite (affiliate link)! yield: 12 – 16 cookiesAuthor: Kelly Millerprint recipe Low Carb Peanut Butter Cookies Low carb cookies made with natural peanut butter, PB2, eggs, flax meal, Truvia, and dark chocolate. prep time: 10 MINScook time: 8 MINStotal time: 18 mins INGREDIENTS:1 cup natural peanut butter3 tablespoons PB22 tablespoons flax meal (affiliate link)6 tablespoons Truvia2 eggs1/4 teaspoon salt1/2 teaspoon vanilla extract1/2 teaspoon baking powder2 ounces 85% dark chocolate INSTRUCTIONS:In a large mixing bowl, stir together all ingredients besides dark chocolate, until well combined.Place rounded tablespoonfuls onto lined cookie sheets. Press into tops of cookies with a fork in a criss cross pattern, if desired. Bake at 350 degrees for 6 – 8 minutes. Cool completely on wire racks.Dip cooled cookies into melted dark chocolate, or just drizzle some over the tops of the cookies. Refrigerate 5 minutes or until chocolate hardens. I had left some without chocolate to see how they tasted, and I definitely prefer them with the dark chocolate but you could definitely skip that if you’re needing something dairy-free.
