This year, I have seriously been OBSESSED with grilled dinners! I’ve been trying to eat better meals high in protein and low in sugar and carbs – grilling is absolutely perfect for that type of thing! Last week I shared Grilled Lemon, Garlic, & Oregano Chicken, Grilled Citrus Herb Salmon, and then earlier in June I shared Tangy Grilled Chicken Drumsticks with you. I can’t get enough! Ok, confession time. Our big gas grill has been broken since last summer. !! If you can believe it, I’ve been able to grill these amazing meals on my indoor George Foreman – man that thing is a workhorse – and no they’re not sponsoring this post in any way, haha! I just love that thing, if for the clean-up alone. I just pop the dirty grill plates in the dishwasher, and we’re back in business! We are definitely in the market for a new gas grill, though. I’d love to not have to cook in batches. Actually, I’d love to just hand it all over to Paul and have him do all the cooking on grill night! I really cannot describe to you how awesome these mushrooms are off the grill. They are juicy, buttery, garlicky, and SO good. Paul was telling me next time I definitely need to make WAY more, so I’ll probably double the recipe! These were seriously bursting with flavor, yum!!
