Beef roast slow cooks with vegetables, ketchup, brown sugar, and spices until it shreds wonderfully and is served on rolls! I HATE chopping vegetables, you guys. I will seriously put off making a certain dinner some nights all because I don’t feel like chopping vegetables. It’s completely irrational and I’m a baby, but I HATE it! I look at Reuben, our third little boy, and we watch him approach the “witching hour” every single night around 5-6 pm. My fellow parents of toddlers know exactly what I’m talking about. His new normal at the time of the night is spent walking around the house whine/crying at different levels of loudness for honestly no reason at all. Any sane person would think he might be hungry with this act. Tonight, for example, he ate an entire serving of this Crockpot Beef BBQ, part of a roll, and a cup of applesauce. Oh, and he washed it all down with a full 8 oz bottle of almond milk. The non-crying period lasted about 5 minutes. And then he was off walking whine/crying again… Honestly? I think we all have a “witching hour” at that time of the night. I might not make laps around the house driving the rest of my family mad with the constant noise, but I will refuse to chop vegetables, darn it. At 6pm I’m JUST TIRED and everyone wants to eat, including me, and usually whatever I have planned sounds boring. See? Adult witching hour.
