Topped with cornbread and cheese – an entire dinner in the Crockpot! Did you know you could make a delicious Tamale Pie in the Crockpot? You absolutely can! And I’ll even argue this version of tamale pie is even more flavorful than traditional baked recipes. What is tamale pie? Recipes can vary widely, but typically tamale pie is a casserole with tamale ingredients (beef, vegetables, beans, tomatoes) and is topped with cornbread. Basically, a tamale in a pie, or casserole, form. What brand of cornbread should I buy? I usually buy the regular Jiffy cornbread mix in the small white and blue box at the grocery store. You can buy the equivalent store brand though, whichever is cheaper! Does the cornbread get baked ahead of time? Nope! You’ll be pouring the cornbread batter directly over the beef filling in the slow cooker and it will bake right there. No need to heat up the oven at all – awesome, huh?! How to make slow cooker Tamale Pie: In the bottom of a Crockpot, stir together cooked ground beef, cumin, chili powder, and salt. Add in enchilada sauce, tomatoes with chiles, corn, and black beans. Cover and cook on high. In a separate bowl, whisk together muffin mix and eggs. Pour over filling in Crockpot. Cover and cook an additional 30 minutes or until a cake tester comes out clean (from the cornbread layer). Remove the lid and sprinkle cheese over cornbread. Cook an additional 5 minutes or until cheese is melted. How can I store tamale pie leftover? Allow any leftover to cool to room temperature and store in the refrigerator in a plastic container with a tight lid.
