I was just discussing with my sister the other night that, while I know this baby still has another 3-5 weeks to cook, it’s KILLING me that I don’t know the exact day of his arrival! It’s way worse this third baby than even when I was working as a full-time elementary teacher expecting Silas! Let’s see, during the week we have 3 different school schedules, Paul’s work schedule, Paul’s church schedule (which includes Wednesday night and Sunday morning), two different soccer schedules 3 days per week, my doctor’s appointments, and my blog schedule. He’s pretty much free to come any Tuesday or Thursday morning. HA! I know it’s not just our family this time of year, however. We’re all super busy, especially with sports and game-day parties. Plus Halloween and Thanksgiving are on the horizon (YAY) and I start getting really excited for family gatherings each weekend. Which is exactly the reason why I LOVE dinner recipes like this one. It takes 30 minutes from start to serving time, requires little to no skill or brain power (can I get a Hallelujah?!), and it makes a TON to feed hungry bellies. The past two times I’ve made this I froze half of the casserole to have on hand when the baby decides to make his debut. This is a perfect one to serve if you’re having company over as well. A complete crowd-pleaser for sure! This is the perfect combination of chili and a casserole in one! I definitely would NOT skip that sour cream on top, yum! Add chili, corn, salsa, and 2 cups cheddar. Stir until well combined.Pour into a greased 9 x 13 baking dish. Top with remaining 1 cup cheddar.Cover with foil and bake at 350 for 25 minutes.Remove foil and bake an additional 5 minutes or until cheese is completely melted and casserole is heated through.
