Traditionally, coffee cake is sweet, but not nearly as sweet as dessert cake. Just enough sweetness to accompany a cup of tea or, of course, coffee. Because of the dialed-down sweetness, they are great for breakfast, brunch, dessert, even snacks. Most have a crumb topping, instead of traditional cake frosting, so they can easily be packed into a lunch box as well. What’s not to love? We have several occasions coming up later this spring and into the summer that are perfect for serving coffee cake – this would be particularly perfect for Mother’s Day breakfast or brunch. When it comes to breakfast and brunch, if I have over ripe bananas waiting to be used on my counter, I usually bake up some banana bread. This time, I decided to try to incorporate those dark, sweet bananas into a coffee cake. With a banana coconut streusel topping, this really takes breakfast to a whole new level! yield: 9 servingsAuthor: Kelly Millerprint recipe Banana Coconut Coffee Cake A sweet banana cake topped with a banana and coconut streusel, perfect for breakfast or brunch. prep time: 10 MINScook time: 30 MINStotal time: 40 mins INGREDIENTS: 1 1/4 cup flour 3/4 cup sugar 1 teaspoon baking powder 1/4 teaspoon baking soda 1 stick butter, divided 1 banana, divided 1/4 cup International Delight French Vanilla Creamer 1 egg 1 teaspoon vanilla extract 1/2 cup coconut INSTRUCTIONS: In a large bowl, sift together flour, sugar, baking powder, and baking soda. Using a pastry blender or two knives, blend in 5 tablespoons of the chilled butter. Set aside. In another bowl, mash half of the banana with the back of a fork. Whisk in creamer, egg, and vanilla until well blended. Gently pour in wet ingredients into dry ingredients, stirring until just moistened. Spread evenly into a greased 9 x 9 square baking dish. Bake at 375 minutes for 20 minutes or until a cake tester comes out clean. Remove cake from oven, but leave oven on. For the topping, melt the remaining 3 tablespoons butter. In small bowl, mash the remaining 1/2 banana and whisk in melted butter. Stir in coconut. Spread evenly over warm cake. Bake an additional 7 – 10 minutes or until topping is just starting to brown.
