Albacore tuna is one item that is an absolute pantry staple in our house. I don’t even add it to our grocery list each week because it’s just a given that I pick up a few cans every time I do my shopping. I usually enjoy tuna in a pita pocket with some lettuce and tomato, as does Paul. And of course I pretty regularly make tuna sandwiches for the boys to pack in their lunch box. One of my ALL TIME favorite sandwiches is the tuna melt. Whenever we find ourselves out to each at lunch time, I’m always tempted to order the tuna melt on the menu – and that is usually what I wind up ordering! There’s just something about tuna and melty cheese together – the flavors just pair together so nicely. I came up with the idea for these Tuna Melt Zucchini Skins in an effort to get us eating more veggies on a more regular basis. Aside from the occasional snack of baby carrots and hummus or ranch dressing, they pretty much universally turn their noses up to veggies! I have to get creative if I want them to try something that incorporates “green” into their snack or meal. These Tuna Melt Zucchini Skins are so cheesy and delicious! I can’t even begin to tell you how easy too, just look over those directions in the recipe below. Plus, you simply can’t beat a 15 minute recipe from start to finish! yield: 12 – 16 servingsAuthor: Kelly Millerprint recipe Tuna Melt Zucchini Skins Hollowed out zucchini stuffed with albacore tuna, seasonings, and shredded cheddar cheese. prep time: 5 MINScook time: 10 MINStotal time: 15 mins INGREDIENTS: 3 – 4 medium zucchini 2 (5 oz) cans Bumble Bee® Solid White Albacore Tuna in water, drained 3/4 cup shredded cheddar cheese, divided 1 tablespoon dried, minced onion 1 teaspoon garlic powder Optional toppings: sour cream, green onion, hot sauce INSTRUCTIONS: Slice zucchini in half lengthwise. Then slice each half into 3 pieces. Using a large spoon, scoop out the white part of the zucchini leaving 1/4″ left in each skin. Place cut side up on a baking sheet. In a bowl, stir together drained tuna, 1/4 cup cheese, and seasonings. Stuff zucchini skins evenly with tuna mixture. Top each with a sprinkling of the remaining cheese. Bake at 450 degrees for 7 – 10 minutes, or until cheese is melted and zucchini is crisp, tender.
