The perfect summer weeknight meal, a great freezer meal, too! To say we’ve become obsessed with our grill as of late is an understatement. We’ve been scouring the internet, old cookbooks, and restaurant menus for ideas to try at home. I’m proud to say that mostly all of our attempts have been successful, so get ready for quite a few grilling recipes here on Mostly Homemade Mom in the coming weeks! We have a few big purchases coming up and, in an effort to save as much money as possible, I’ve been really stalking the grocery sales and coupon deals to stock up on the lowest prices possible. Besides our house payment, food is our next biggest monthly expense and, with three growing boys, we go through a lot of meat! My plan is to buy in bulk the next time I see a cheap chicken sale and make up a lot of freezer bags with chicken and marinade – to save the step later on when we’re ready for dinner. This Asian Grilled Chicken Skewers recipe is perfect for that plan! Boneless chicken tenderloins marinading in a sweet Asian soy sauce and then grilled on skewers. This was definitely a meal the whole family enjoyed and asked for seconds! These were so, so moist and tasty! Asian Grilled Chicken Skewers Boneless skinless chicken breasts cut into strips and marinated with orange juice, soy sauce, and other seasonings for a grilled chicken skewer recipe. Add remaining ingredients to bag and seal, pressing as much air out as possible.Turn and shake the bag well to incorporate ingredients. Refrigerate at least one hour, or overnight (or place in freezer and thaw overnight when ready to cook).Remove chicken from bag and discard bag and remaining marinade. sheri hall says May 30, 2018 at 3:08 pm if i don’t have a grill how would you suggest I cook them? and actually they are chicken skewers from costco so I believe they may already be pre-cooked? Thank you so much Reply
Kelly Miller says May 30, 2018 at 7:32 pm Hi Sheri! You could certainly bake them in the oven rather than grilling – I would try 425 degrees for 15 minutes and test to see if they’re done. I’m not familiar with the chicken skewers at Costco, you’d have to check in the store and see if those are cooked. The ones in my post here above are raw. I hope that helps! Enjoy! Reply
