Those of you that are regular Mostly Homemade Mom readers know that I LIVE for shortcut recipes. I’m a busy working wife and mom of two and while I’d love to cook the day away with from-scratch meals, it’s just simply not possible. One of my absolute favorite shortcuts to use in the kitchen is frozen fruits and veggies! A study conduced by the Frozen Food Foundation and University of Georgia actually found that, in many cases, the nutritional value of frozen fruits and veggies (specifically vitamin A, C, and folate) was greater than that of freshly stored produce. Why? They believe mainly because of how fresh veggies will degrade nutritional value as they’re stored. I’m TOTALLY guilty of pulling out the carrots from the bottom of the produce drawer and putting together a yummy soup to use it up before it goes bad. I know I’m not the only one! There are seriously so many options down the frozen food aisle! I really love menu planning, but I will often times pick up a frozen meal or two for my family to just have on hand in case dinner tanks or someone is stuck somewhere and isn’t home in time. I’ve always loved frozen pot pies and of course Paul’s favorite hands down are Hot Pockets! I’m sure everyone in your family could find one they love! In this yummy Cheesy Bacon Tortellini Skillet I used two of my favorites: frozen peas and refrigerated cheese tortellini.
