I’m officially here to apologize to all the moms and dads of the students in my classrooms during my years of teaching. I absolutely loved the parents of my kiddos, don’t get me wrong. But I honestly didn’t realize how hard it was on the parents when the kids get home from school. Not only do you have to make sure the folder is looked through, papers signed, and newsletters read, you have to give them a bit of time to give their brain a break before buckling down with homework. And then comes the hardest part of all. Teaching your kid to read. I’m hanging my head in shame because not only did I teach lower elementary school, I was also a Reading Specialist. I. Had. No. Idea. It’s so stinking hard to teach kids how to read! And the pressure as the parent is overwhelming! Completely different than following a lesson and teaching in that manner. My mom tells stories of how I was reading before I went to Kindergarten. Mainly because I really loved reading. Silas is a super smart kid and loves anything math or science related. But when it comes to reading, it was become a serious chore. Something both of us dreaded doing every night and sometimes ended in tears. I’m really happy to report that he’s reading much better now – but it’s SO HARD. Needless to say, with all that stress between the kids coming home from school and bedtime, there’s not much time left for a gourmet dinner – that’s for sure! This Pesto Chicken Tortellini Skillet is really perfect for those nights. I absolutely love the garlicky pesto sauce and the lemon juice gives it a bit of a tangy flavor. It’s become one of our favorite dinners! I was even able to get Silas to take more than one bite of broccoli with this dish. Now that’s what I call a success!
