Only 5 simple ingredients between you and this decadent mocha mousse - yum!
I've never been a huge pudding person. I know that sounds weird, but it's true! I've talked about this before on Mostly Homemade Mom, but I come from a long line of baked good lovers in my family. Unfortunately, I married someone quite the opposite. Paul LOVES pudding, ice cream, and jello so much more than anything baked.
Ok and just one word about jello. Blech. :/
I started out making the instant pudding for Paul in our early years, we had it sometimes growing up, too - it just wasn't mainly what my family did as far as desserts were concerned. Of course he wanted vanilla pudding all the time, but man oh man, chocolate instant pudding. Just mix with milk and voila - awesome chocolate fix.
And believe me, I know the instant pudding is really easy. Why change a good thing, right?
I give you: Chocolate Chip Mocha Mousse. While not instant, it's really only a few more steps to the absolute best chocolate pudding you'll have. Not even kidding. And in case you are serving this to a non-coffee lover, I would say you barely notice the coffee flavor - it's more of a richness in the mousse. Beware, this stuff is REALLY addictive!
Chocolate Chip Mocha Mousse
makes 2 servings (which is a good thing)
1 1/4 cup semi sweet mini chocolate chips, divided
3 tablespoons butter
1 tablespoon brewed coffee
2 teaspoons vanilla extract
1/2 cup whipping cream
Place 1 cup mini chocolate chips and butter in a bowl and microwave for 45 seconds. Stir and heat another 15 seconds, or until chocolate is completely melted. Stir in coffee and vanilla extract, set aside. In a stand mixer, whip the heaving whipping cream until thick. Stir whipped cream into the chocolate mixture. Spoon into serving dishes and sprinkle remaining mini chocolate chips evenly over both dishes. Refrigerate 1 hour, or eat immediately. :)
Chocolate lovers, unite!!
