Such a great sandwich for lunch or dinner Ok, so I’m REALLY excited about today’s waffle recipe. If you’re just joining in today, all week I’m sharing some new ideas on how to enjoy your favorite Eggo Waffles! In honor of Eggo’s Great Waffle Off recipe contest. Yesterday I shared a great snack idea, Apple Cinnamon Waffle Parfait. Delicious! Today’s recipe is this Waffle BLT with Fresh Herb Spread… OMG! This has got to be one of the best BLT’s I’ve ever had, if I do say so myself. The fresh herb spread is SO good and paired with the crispy waffle, it gets trapped in the little squares. The perfect amount of spread in every bite! As a side note, I was ALWAYS keep Homestyle Waffles in my freezer for BLTs and club sandwiches. They were perfectly crispy and just the right amount of flavor for the sandwich. The spread actually made more than needed for the sandwiches so we enjoyed the rest as a dip with some french bread.
