Growing up, we understood that having seafood was a VERY special occasion. Holidays, big family celebrations, and the occasional trip to a restaurant were really the only time we had our seafood favorites. My sister and brother and I were pretty much the exact OPPOSITE of picky eaters, so when we knew we’d be eating seafood it was the best day ever! Fast forward to my family now. Let’s just say, these little boys in my family are spoiled! If you ask them what their favorite food is, most of the time they will overwhelmingly choose shrimp. That’s because of how easy it is to pick up SeaPak Shrimp in the freezer section of the grocery store! You all know how obsessive I can be with convenience, and their seafood is definitely one of them. We love going out to eat of course, don’t get me wrong. But as a family of 5, it’s not always an option for us. It’s exhausting for me to get all of our gear together, the cost is way more than eating at home, and don’t even get me started on who might or might not behave correctly! I really love being able to just whip up a delicious shrimp meal, complete with yummy side dishes and usually a salad, in a short amount of time right here at home. And not a lot of energy on my part as well – something I REALLY need at the end of the night when my brain is fried! These Spicy Sriracha Shrimp Wraps came to my mind on a night where I was feeling a bit creative and wanted to combine our favorite flavors into our seafood dinner. In reality, this takes no more time than any other dinner – actually less! I used about two tablespoons of sriracha in the sauce, adjust this to the level of heat your family likes. I thought this was the perfect amount for flavor and kick, and I’m not one to like super spicy foods. The creamy avocado goes perfectly with the mayo sauce. This wrap is SO good! Add popcorn shrimp, chopped butterfly shrimp, shredded cabbage, avocado slices, and an extra mayo drizzle. Wrap tightly and slice. Serve immediately. Make about 8 wraps. Probably the hardest part about preparing these wraps is not snacking on all the shrimp sitting next to you! Yum! Just a word about your lovely picky eaters – I know and I have one.
