A perfect dinner idea for the whole family! If the stunt I pulled earlier this week is any indication of how this crazy school year is going to go, I’m in for trouble. Are you ready for this? On Tuesday I had a deadline to make early in the morning, so Paul was on parent duty. After I finished, I sat down to relax with my coffee, and Paul asked if I wanted to go out to breakfast. He already knew what my answer would be before the words were out of his mouth because breakfast is my favorite to go out for. What can I say, I love pancakes…and scrapple…and coffee… the whole thing! So started the mad rush and craziness to get the kids teeth brushed, dressed, and strapped into the car. As we driving to a new local restaurant he’s been dying to take me to, we passed the boys’ new elementary school. I glanced at the clock in the van as my stomach jumped into my throat. “STOP STOP THE CAR AND TURN AROUND RIGHT NOW!!” In that instant, I realized that morning was Wesley’s Kindergarten orientation. Like, at that very moment. The child that is super nervous about starting school and I was very much looking forward to this event to help him get used to the idea of Kindergarten. And of course, WE WERE MISSING IT! Luckily when we walked in, they were still going over some general school information in the auditorium and hadn’t taken the kids to practice riding the school bus just yet – even though we live basically down the street and we were 15 minutes late. It wound up being a really nice morning meeting his teacher, seeing his classroom, and meeting some new friends. I’m especially excited that he is now not as nervous about starting school. But MAN this year is going to be hard on my Mommy brain!! Add in keeping these hungry people fed and I’m going to be a mess. I will say that I already know keeping to a menu plan is going to be difficult with various schedules and activities going on. Add chicken, green pepper, and mushrooms. Saute over medium high heat until chicken is cooked through, about 8 minutes. Remove from pan and set aside.Drain any extra liquid from pain, return to stove, and add dry penne. Stir in 3 cups cold water and cook over high heat for 10 minutes, stirring occasionally, until pasta is tender.Add chicken & vegetables back to skillet along with sauce. Stir to coat and cook an additional 5 minutes until heated through.Serve topped with shaved Parmesan cheese.
