An amazing cookie for fall! You all know I’m obsessed with pumpkin, but I have to admit I’d never had a pumpkin cookie before! Okay, maybe a pumpkin SHAPED cookie, but never one that actually contained pumpkin. Seriously? These were gone in 2 days! Our whole family gobbled these up, kids included. So maybe the kids shouldn’t count because Wesley just started saying “cook cook” and pointing at the cookie jar making puppy dog eyes at us. He pretty much gets a cookie every time he does it, what awesome parenting skills right? Either way, these cookies are a great twist on the traditional oatmeal raisin cookie and they make your house smell wonderful! These cookies are great to give away because the icing makes them look fancy, but it hardens when it dries so they’re easy to stack and don’t damage.
