We first started making this Loaded Mashed Potato Casserole at least five years ago, and it’s been an absolute family favorite ever since! If you are looking to wow your friends and family, bring this dish to your next Thanksgiving or Christmas feast! What’s in loaded mashed potatoes? It can vary, but most “loaded” mashed potatoes have bacon, cheese, and sour cream! What kind of potatoes are used in this recipe? I always use russet potatoes for this recipe and it always turns out amazing! How do you make loaded mashed potato casserole? Place peeled and cubed potatoes in a stock pot. Cover with water. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are easily pierced with a fork. Drain the potatoes, return them to the pot, and mash them with a potato masher or the back of a spoon. Add in butter and cream cheese. Stir until completely melted. Mix sour cream, cheese, bacon, green onion, and kosher salt. Mix until well combined. Spread into a 9 x 13 baking dish. Top with remaining cheese, bacon, and green onion. Bake until hot and cheese is melted on top. How many people does this recipe serve? Short answer: A LOT! I use my white Corelle baking dish and it just about fills it to the brim! Lora says July 5, 2020 at 6:56 pm I haven’t made but I am a great cook, per my consumers of my cooking, I would think it would take longer than 15 minutes to heat thru so I would leave off toppings and then when hot in center then add them and bake till melted. Might need to cover for initial heating so they don’t dry out. Reply
