Such a great copycat recipe! I have to admit, even though I love Mexican food I was never really fond of Taco Bell. My husband however, well that’s a different story! I was forced to find something that I liked there because he was not going to stop requesting Taco Bell anytime we decided to get something quick for dinner. Taco Bell’s grilled stuffed burritos were really the only thing there I liked, but they were different every time I ordered them. Most of the time the refried beans were on one side and the beef was on the other. So I decided to try and make my own and they turned out FANTASTIC! The best part about this recipe is that you can prepare the basic filling and everyone can customize them according to how spicy (or not in my case) they like. Look at that cheesy goodness! Stir in refried beans and salsa.Preheat indoor grill (I used my George Foreman).On a tortilla, spread a heaping spoonful of meat filling.Top with a good scoop of spanish rice and sprinkle with cheese.Wrap up burrito style and grill for 5 minutes.
