During the summer with two active little boys, I’m beginning to realize how much free time we all have during the day – and surprisingly how little time we see each other! Well actually we do see each other, but it’s always because we’re trucking them to yet another outing or activity. Don’t get me wrong, I’m super thankful for the fun events in our area this summer, a lot of which are really cheap or free for us to do. Last week Silas’ summer reading program at the library started and this week they hosted a free magic show with a local magician. Not to mention that they pretty much spend all day outside playing with their friends until I practically threaten them with no games or tv (which they weren’t playing/watching anyway) to get them to come in and eat. Grilling out for dinner is one of our favorite things that Paul and I do together. He’s the guy manning the grill and we usually put our heads together to come up with something different. And luckily, most of the time the boys come running in for dinner! When all four of us actually sat down together with these Grilled Pineapple Burgers, along with some icy cold drinks to cool us down, it was a true family moment. We’re able to hear all the funny and crazy things they’ve done at the playground and we just get a chance to eat and spend time together. Then of course 5 minutes after they’d finished their burgers they were running out the door again, but it was wonderful while it lasted – ha! These burgers are the perfect way to get your family running to the table for dinner! Form into 6 patties and place on grill.While burgers are grilling, combine BBQ sauce, pineapple preservers, and brown sugar in a small saucepan. Bring to a boil, then turn to low.Once burgers are flipped, baste with a generous amount of BBQ mixture. Once burgers are cooked through, remove burgers from grill, and place pineapple rings on grill (or you can cook these alongside the burgers if you have enough room on your grill). Cook pineapple rings for 1-2 minutes or each side.Place burgers on rolls and top with pineapple slices. Serve with additional warm BBQ mixture if desired.
