Such an easy and yummy dessert that’s ready in minutes! I absolutely ADORE simple and easy recipes like this one. These Cherry Pie Sugar Cookie Bars have such straight forward instructions that makes it perfect for a new baker or kids in the kitchen to whip up! I like to keep a pouch of sugar cookie mix and a can of cherry pie filling in my pantry just in case I need a quick dessert. Guests coming over? New neighbor? A sweet friend with a young baby? There’s literally no one I can think of that will turn away these delicious bars! Can I use homemade cherry pie filling? It should work! Just use the same amount as listed in the recipe below. Do I mix the sugar cookie pouch with the ingredients on the back? No! You’ll be just using the mix dry, directly as it is in the pouch. What’s in this recipe? How to make this recipe: Mix egg, dry sugar cookie mix, and melted butter in a large bowl. 2. Press the sugar cookie dough into a square baking dish, reserving some of the dough for the topping. 3. In a separate bowl, stir together cherry pie filling and almond extract. Spread evenly over sugar cookie dough in baking dish. 4. Sprinkle reserved cookie dough over top of the pie filling. Bake, cool, slice, and serve! Pro tips: Allow bars to cool on the counter, then wrap slices in plastic wrap and keep in the fridge or freeze for up to 3 months. Switch out the cherry pie filling for apple, peach, or blueberry! Serve slices slightly warm with vanilla ice cream for a crumble texture Slices will cut more easily if they are completely cool, stick it in the fridge if you’re in a rush! Everyone wanted the recipe, so gave them the name of them along with your name and told them to go to Pinterest. I got several messages telling me they found the recipe and pined it. Reply
Marybeth Schaefer says March 5, 2020 at 12:36 pm I love these bars, they can be thrown together in less then 10 minutes plus baking time. one change I made was adding 1 teaspoon of almond extract to cookie base and cherry filling and sprinkle some slivered almonds on top before baking. You can also make this with snickerdoodle cookie mix also and apple pie filling . Before I bake this I sprinkle a little cinnamon and sugar mixture on top. Reply
