I’m curious, what’s your favorite go-to dinner recipe? I’m not talking about the meal your family raves about every time you make it. I mean, when all else fails and you’re in a pinch (and everyone’s starving and cranky), what’s the dinner that you make? I could see tacos, they’re pretty easy to pull together. When we have tacos though, we HAVE to have sour cream and soft taco shells. I think it’s me, I’m high maintenance when it comes to my tacos! A lot of times we’re out of one or both, so this isn’t it for us. Can Can Taco Soup is one I try to always have the pantry ingredients on hand to make, but I guess part of the “being able to pull it together” bit is also having Paul pull it together if I need him to. He’s never made it before, so this one’s out (though I’m making a mental note :). For us by far, hands down, it’s good old spaghetti with meat sauce. Actually, any pasta we have on hand, any jarred sauce we have in the pantry, and some ground beef. Any mushrooms hanging out in the fridge get tossed in. Top it with some parm or mozzarella, and dinner is ready. Everyone’s happy and fed, and I get to settle down with a coffee and my laptop. Mommy wins! This Crockpot Chicken Spaghetti is that same throw-together spaghetti and meat sauce meal, only for the slow cooker. I hate doing anything besides dumping it in and turning the thing on, so chicken works better for me in the crock – no pre-browning of meat needed. The green pepper is awesome in this sauce and mushrooms would be even better (just throw them in with everything else). Paul’s not really crazy about the texture of the cooked peppers, so I cut them in strips. It flavors the sauce nicely, but he can easily avoid them on his plate. Yum-o!! I’ll still turn to jarred sauces for a quick meal, but this sauce is packed with flavor and so much healthier for your family! I could see making a double batch and freezing the leftover sauce to use in place of the jarred variety.
