A much healthier version of traditional chili! This Crockpot Chicken Chili recipe is one of those dinners that you just can’t go wrong with planning it for your family. I’ve never once had a complaint over this dinner – and that’s saying something with the picky eaters I live with around here! Traditional chili with beef can be much higher in fat content, but this recipe uses boneless skinless chicken breast – the calories are majorly curbed here! Can bone-in chicken be used instead of chicken breasts? Sure! Just make sure to remove the bones before serving. Can fresh corn and beans be used instead of canned? Of course! Just use the equavalent amount (about 1 1/2 cups) of each. Frozen corn could be used as well, no need to thaw either! How to make Crockpot Chicken Chili: Place chicken breasts in the bottom of a slow cooker. Add remaining ingredients on top of chicken. Stir ingredients well. Cover and cook on high setting. Remove lid and turn off heat. Shred chicken breasts with two forks. Stir well before serving.
