I walked into Target the other day, and I swear the cute sandals were laughing at me. All sorts of floral t-shirts, bright colored bathing suits, and summery skirts mocking me as I walked by in my tired beige toggle coat, black plaid scarf, and pilly grey gloves. Right outside in the parking lot are 4-5ft high snow piles and salted walkways leading to the door. People, there should be a rule. We are still a good 2-2 1/2 months away from even thinking about wearing those clothes around here. I mean seriously Target, can’t you hire some designers to make long sleeve/long pants in springy colors and patterns FIRST before you decide it’s time to pretend winter doesn’t exist anymore? In fact, I propose a new “shopping season” in stores like what I described. Oh I would be there in a heartbeat! Come on, at least put the bathing suits away for goodness’ sake. If you’re depressed that winter is never-ending like I am, your probably getting sick of making the same boring soups and casseroles to warm your family up. This one is truly a keeper. Ham always makes me think of Easter, so this casserole is the best of both worlds. Easy ingredients, too that you’ll most likely already have on hand. Anyone else praying like heck the snow has come to an end?
