I just love the combination of spinach, cheddar, and potatoes and I just know my entire family will, too! My kids’ Christmas wishlists were super awesome this year. The heart-warmer award goes to my oldest, Silas. I told them to think of 10 things to put on their list. After thinking of three, he hold me he was done because he couldn’t think of anything else. Of course I encouraged him to think of a few more things and he completed the list, but I love how he’s not obsessed with getting a mountain of presents. The funny-guy award goes to Wesley, which I’m not surprised at in the least. Included on his list are “100 fijit spinners”, “nirth gun”, and “bulloons.” Yes, balloons. Continue boiling for 15 - 20 minutes or until potatoes are easily pierced with a fork. Drain and transfer potatoes to the bowl of a stand mixer.While potatoes are boiling, heat olive oil in a deep skillet over medium heat.
