Leave a review Ingredients 8 potatoes peeled and quartered 2 tbsp olive oil 16 oz fresh baby spinach 2 cloves garlic minced 1/2 cup butter 3/4 cup sour cream 1 tsp salt 1/2 tsp pepper 1 cup shredded cheddar cheeseInstructionsPlace peeled potatoes in a stock pot, cover with water, and bring to a boil. Continue boiling for 15 - 20 minutes or until potatoes are easily pierced with a fork.
