This is perfect on pasta and sandwiches! I have had a wonderful year of spinach in my backyard kitchen garden and I was searching for a way to use it up. This fresh Spinach Pesto recipe is perfect! It’s a great way to use up a bag of spinach hanging out in your fridge as well! We’ve had quite a chilly and rainy spring so far this year. My tomatoes and peppers aren’t loving it much, but my early spring veggies like spinach, peas, and lettuce, are absolutely going bonkers! There is truly nothing more easy than tossing out some spinach seeds in the garden for fresh picking anytime. There’s truly nothing like the flavor of fresh spinach as well! Does it taste like spinach? Spinach pesto has slightly milder flavor than typical basil, but the flavor is really deep and wonderful! You can tell there’s spinach in it, but just barely. Can I substitute spinach for basil? Yes, for some of the basil. While both spinach and basil are VERY easy to grow yourself, fresh basil is much more expensive than fresh spinach in the grocery store. So replacing some of the basil with spinach will make a much more affordable homemade pesto. Does pesto have tree nuts? Traditionally, yes. I usually use chopped walnuts because I have walnuts on hand in my pantry more often than not. Can you freeze pesto sauce? Yes! Pesto freezes wonderfully. I like to freeze small portions in ice cube trays, pop them out, and keep them frozen in freezer bags. They thaw very quickly that way. How to make spinach pesto: In a food processor or blender, pack in spinach leaves, basil leaves, walnuts, garlic cloves, Parmesan, olive oil, salt, and pepper. Cover and blend until smooth. Done! So easy! Make a simple Spinach Pesto Pasta: Just toss 1/4 cup – 1/2 cup pesto with 2 cups cooked pasta. Top with fresh basil leaves and more grated Parmesan cheese. So delicious and simple for a dinner!
