02Nov2012 Calico Baked Beans This recipe for calico beans has been in our family so long I’m not sure who it started with! I know someone began bringing it to church functions and now it’s one of those “must make” side dishes for parties. I have always said it makes plenty to serve it as a meal on it’s own, but Paul reminded me as he was eating this for dinner that it was in fact a side dish and not dinner. :/ This is a perfect potluck dish — I froze the leftovers in jumbo muffins tins and then popped them out into a freezer bag. This goes great with pulled pork or BBQ chicken sandwiches! Calico Baked Beans 1lb ground beef 2 tablespoons dried, minced onion 5-8 slices bacon 28 oz can country style baked beans 16 oz can kidney beans, drained 16 oz can lima beans, drained 16 oz can Campbell’s pork & beans 3/4 cup brown sugar 1/2 cup ketchup 1 tablespoon prepared mustard Cook bacon in skillet until crispy. Place on paper towels and set aside, drain grease from skillet leaving about a tablespoon in the bottom of pan. Add ground beef to skillet and cook until brown, drain, and return to pan. Add baked beans, kidney beans, lima beans, pork & beans, and crumbled bacon. In small bowl, mix brown sugar, ketchup, mustard, and minced onion. Add brown sugar mixture to beans in skillet, turn to coat. Pour beans into a 2 quart dish (will fill to top) and bake at 350 for 30 minutes. In the mood for beans?
