I’m sorry, did I completely sleep through summer and now it’s fall again?! What in the heck happened?? Apparently it’s supposed to be 90 degrees here on Memorial Day, but I’ll believe it when I feel it. I’m actually hoping it does – my poor tomato plants need to get in the ground if I’m going to have any kind of a yield this year! If it really is going to be that hot, I think we’ll break out the kiddie pool and the sprinklers at my Mom’s house to have the kids cool off. I picked up a few water balloon sling-shots at the dollar store the other day. In one bowl mix in 1/2 teaspoon red food coloring. In the second bowl, mix in 1/2 teaspoon blue food coloring. Leave the third bowl plain. Line 24 muffin cups with paper liners. Layer each muffin cup with 1 tablespoon red batter, 1 tablespoon white batter, and 1 tablespoon blue batter. Bake at 350 for 14-19 minutes or until a cake tester comes out clean. Allow cupcakes to cool completely.For frosting, beat butter until smooth. Add in salt. Add in powdered sugar 1 cup at a time. Add 1-2 tablespoons milk to get a creamy consistency. Pipe or spread frosting on cupcakes and top with sliced strawberries and blueberries.
