Simple ingredients like baking mix, strawberry jam, sugar, and milk are all you need for this yummy back to school breakfast on the go! I had a rare day out to myself last week and as I was browsing the aisles of Sam’s Club, trying to check some items off of the boys’ back to school shopping list, it hit me. Their summer reading program at the library ends this week. Therefore, there was only one thing left for me to do. PANIC! In all actuality, we read a TON this summer. Silas is now a reader so he has read out loud to all of us and to Wesley in the car on long drives. Wesley practiced reading a lot by listening to me read to him and looking at the pictures. Reuben had an itty bitty reading chart to fill out with the library this year, too, and it included other activities as well to complete besides reading. Building blocks, counting things, singing the ABCs, it was really fun and cute. I’m super thankful to live in an area where the community supports the local library system tremendously. They’ve donated some really fun prizes for all of the kids that complete the youth reading program this summer and that has kept the boys really energized – especially this last week with the push to finish.One of the ways that I discovered that keeps the boys motivated with their reading is getting new books that they pick out themselves – and I was so excited to find that Sam’s Club has a Scholastic “Start School Like A Champion” incentive. These delicious muffins are absolutely perfect with a cup of hot coffee in the morning! I anticipate some busy back to school mornings with these in hand! Before blogging and staying home with my kids, I was a full-time teacher and I saw the same thing in my class that I see now with my own kids. It’s SO HARD to keep them interested in reading and it helps so much when they are involved in the reading process. Using a pastry blender or two knives, blend in cold butter.Add milk and stir until just moistened.Add one tablespoon of muffin batter into each of 9 paper lined muffin cups that have been sprayed with nonstick spray.Add one teaspoon strawberry jam into each muffin cup. Divide the remaining batter into each muffin cup, about 2 tablespoons each.Bake at 425 for 14 - 16 minutes or until a cake tester comes out crumbly.Make the glaze by whisking powdered sugar and milk together until smooth.
