Peach Walnut Dump Cake

June 21, 2014
Peaches topped with dry cake mix, butter, walnuts, and coconut. The classic dump cake with a peach twist, yum!

It's finally here! The first day of summer! Waahoo!!

Here's my list of 10 goals I hope to accomplish this summer:

1. Paint living room and upstairs hallway

2. New curtain rod and curtains in the living room

3. Make a new garden bed and plant tomatoes/peppers

4. Complete Silas' Ready 2 Read preK pack

5. Wesley fully potty trained

6. Mountain vacation in August

7. Make throw pillow covers

8. Organize basement mess

9. Don't kill above mentioned tomato/pepper plants, and flowers in front yard

10. Find some sort of toy storage unit for kids' room

11. Take the boys to some sort of amusement park

12. Go strawberry picking

13. Pool trip!

14. Have Silas ready for soccer in August

15. Get the kids caught up on check ups/dentist (they are WAY late)

16. Wall decor project in dining room

Ok I lied. WAY more than 10 goals, and I could probably keep going!

I hate the heat, sweaty kids, L.O.N.G. days, but I really love all the possibilities of summer - don't you? Yeah, I may not get all those things done, but I can guarantee you we'll have a blast together!

This EASY Peach Walnut Dump Cake takes mere minutes and a handful of ingredients to put together - and it's absolutely delicious! This would be a great breakfast brunch cake, too. I just love simple desserts like this for summer!

Peach Walnut Dump Cake
adapted from Gooseberry Patch Country Quick & Easy Cookbook (affiliate link)

2 (15 oz) cans sliced peaches with juice, undrained
16 oz box white cake mix, dry (ignore ingredients on box)
1/2 cup butter, melted
1 cup chopped walnuts
1 cup flaked coconut

Pour peaches with juice into the bottom of a greased 9 x 13 baking dish. Sprinkle dry cake mix over peaches. As evenly as possible, pour melted butter over dry cake mix (it's ok if some spots are still dry). Sprinkle walnuts and coconut over top. Bake at 350 degrees for 30 to 35 minutes.

This cake is a bit messy, but so SO good!

Here are some more of my favorite easy summer desserts:

Red, White, & Blue Cheesecake Torte

Key Lime Pie Trifle

Chocolate Strawberry Shortcake

  1. The chicken looks amazing. One question though: what role does the egg play? I've never seen a marinade recipe include an egg. And even though you reserve some marinade that didn't have raw chicken in it, isn't it weird to baste the almost cooked chicken with raw egg? I would love to try this recipe, but I am tempted to leave out the egg!

Lesa, you are totally right - I would just leave it out!

  3. I'm a new wed, and an awful cook! One of the gifts we received as a wedding gift was a slow cooker, and I love it! It's like I can actually cook!! I can't wait to try out this recipe! It looks scrumptious!

I have to thank you sincerely for this and if I ever see you on the street I will hug you and buy you an expensive handbag. It has been my go-to chicken for enchiladas now for a while and feeds my family of 7 no problem. Today I tried kind of a enchilada casserole/lasagna thing and my 2 pickiest eaters had 2 helpings and one of them asked if he could have them as left overs tomorrow night. Seriously, these are kids that only eat pepperoni or cheese pizza, won't eat chicken unless its a nugget and COMPLAIN about everything that is put in front of them. Tonight was the first time in months where not one of the 5 kids complained, no one had to be bribed to eat, no one snuck anything to the dog or made retching sounds or faked a headache/stomachache/toothache/sore throat. All I heard was the sound of chewing and it was blissful. THANK YOU THANK YOU THANK YOU.
