Breakfast Waffle-wiches #EggoWaffleOff

All week I've been sharing some new and tasty recipes featuring Eggo waffles in honor of their Waffle Off Recipe competition. In spite of them being waffles of course, I have yet to share a breakfast idea for you! Here's one that I decided to try after how delicious the Waffle BLT was by switching out regular toast for Eggos. 

Why not do the same with a breakfast sandwich? It turned out fabulous! Such a great (and cheaper) alternative to drive-through breakfast sandwiches, plus you can customize to your family's tastes. Switch the sausage for bacon or ham. Try a monterey jack or American cheese instead of the sharp cheddar. Really the possibilities are endless!

Breakfast Waffle-wiches
makes 4 breakfast sandwiches

8 Eggo Homestyle waffles
4 eggs
3 tablespoons milk
4 slices sharp cheddar cheese
4 frozen sausage patties

Preheat oven o 350 degrees and spray 4 cups of a muffin tin with non-stick spray. In a small bowl, beat eggs, milk, salt, and pepper. Pour eggs evenly into 4 muffin cups. Bake for 15 - 20 minutes or until eggs are set in the center. Allow to cool slightly (eggs will deflate after a few minutes). Meanwhile, cook sausage patties according to package directions and toast waffles. Using a drinking glass, cut out a circle from each waffle (use the scrap waffle rings a snack for the kids, mine loved them). Cut out circles from each slice of cheese using the drinking glass also. Place one slice of cheese on each of 4 waffle circles. Place baked egg on top of cheese and one sausage patty on top of the egg. Add second waffle circle to finish each breakfast sandwich. Serve immediately.
