Waffle Breakfast Sandwiches

Homemade Waffle Breakfast Sandwiches made with eggs, cheese, sausage, and frozen waffles. An easy breakfast on the go!

Ingredients

  • 8 frozen waffles
  • 4 eggs
  • 3 tablespoons milk
  • 4 slices sharp cheddar cheese
  • 4 frozen sausage patties

Instructions

  • Preheat oven to 350 degrees and spray 4 cups of a muffin tin with non-stick spray.
  • In a small bowl, beat eggs, milk, salt, and pepper.
  • Pour eggs evenly into 4 muffin cups.
  • Bake for 15 - 20 minutes or until eggs are set in the center.
  • Allow to cool slightly (eggs will deflate after a few minutes).
  • Meanwhile, cook sausage patties according to package directions and toast waffles.
  • Using a drinking glass, cut out a circle from each waffle (use the scrap waffle rings a snack for the kids, mine loved them).
  • Cut out circles from each slice of cheese using the drinking glass also.
  • Place one slice of cheese on each of 4 waffle circles.
  • Place baked egg on top of cheese and one sausage patty on top of the egg.
  • Add second waffle circle to finish each breakfast sandwich. Serve immediately.
