The perfect cupcake to welcome fall! Is it weird that I get all excited when I start seeing all the fall candies in the stores? No? Ok, good. 🙂 I am DONE with summer. I don’t think any year I said that phrase, I actually really knew what being “DONE” with summer actually meant. Two vacations, one wedding, a million activities, the smell of sunblock everywhere, dirty little boy toes, extra humid days, having to stop every 10 minutes to sit down because my hands and feet are so swollen I can’t even bend them… yep, done. So done, in fact, I pretty much have the boys’ entire fall/winter wardrobe bought and put away. The baby is good for newborn and 3 month clothes, and I’m working on 6 month clothes now. The beach towels and beach toys have been packed in the basement. And the candle warmer has now switched to “Autumn Wreath” scent. Done. Finally I’m perusing Walmart when I stumble upon this sight. Yesssssss. In case you were wondering, they do in fact taste as amazing as they sound. And I’ve created an over-the-top incredible cupcake to go with them. Yellow cake mix, apple juice and applesauce in the batter, with pecan chips and these candies. If you can’t find this variety, you can substitute with whatever fall flavored M&M’s are at your store. Topped with a cinnamon maple buttercream frosting and garnished with some more pecan chips and M&M‘s®. These are insanely good, and easy! These are some serious cupcakes here, people. Add applesauce, apple juice, water, and eggs and beat until well combined. Stir in pecan chips.Divide batter among 24 muffin cups lined with paper liners, about 3 tablespoons of batter each.Drop 3 M&M's® on the top of each cupcake. Bake at 350 for 15-20 minutes.
