I will admit, I was hoping with this third little one we’d finally be able to get Easter dresses and flowered headbands – instead I’ll be settling for one more Easter suit and bow-tie. They’re just so darn cute. I think I’ll survive! 🙂 Easter is really special to me. I love, love, love seeing those peeks of tulips and hyacinths poking out of the still-frozen ground. The things that were once dead are coming alive again! It’s looking forward to warmer months where the kids can go out and play and we can go explore places as a family. Every holiday is more fun with kids in the house, but Easter is just so exciting with them here! As you go about these few weeks leading up to the holiday, picking out your adorable little spring outfits for your family, put this incredible recipe on your to-do list! Super easy, I promise – everyone will LOVE them. They look like adorable, festive, spring cupcakes on the outside, but as soon as anyone takes a bite there’s a sweet surprise inside! Start with a batch of this amazing yellow cupcake recipe. I like to double the paper muffin liners that way the grease from the butter in the batter doesn’t bleed completely through. Using a small knife, cut out a piece in the center of each cupcake, being sure not to cut all the way through to the bottom. Frost as usual and decorate as desired. Do yourself a favor a buy a nice icing tip kit – I have zero cake decorating ability, but I totally fool everyone with my cupcakes!
