Sliced cucumber, onion, vinegar, and sugar – so simple and perfect with grilled burgers and hot dogs! Many of you know I grew up in Northeast Philadelphia until I was in high school – and then my husband and I moved back to the city for a few years before we had kids. I miss our city deli shop so much! Cucumber salad was one of my favorites – and this Deli Cucumber Salad Recipe is EXACTLY how I remember it from Philly! You will not see a simpler salad recipe than this – just cucumbers, onions, water, vinegar, and sugar. You read that right! I love growing cucumbers in my kitchen garden during the summer and this is a great recipe to use up those delicious garden grown cucumbers as well. How long can you keep cucumber salad? 1 week in a tight fitted container in the fridge. How do I slice the cucumbers and onions thinly? Use a food processor with a slicing disk or a handheld mandolin slicer to ensure evenly thin slices. Can I substitute apple cider vinegar for the white vinegar? No! It will change the flavor considerably, only use regular white vinegar in this salad. How to make Deli Cucumber Salad: Peel and thinly slice cucumbers. Thinly slice onion. Combine both in a mixing bowl. Add in vinegar, water, and sugar. Stir well. Cover and refrigerate at least 2 hours before serving. Can I serve this immediately? I HIGHLY recommend refrigerating for the suggested 2 hours before serving. With that being said, I usually can’t help myself and grab a small serving right after mixing anyway. ? Can this cucumber salad recipe be frozen? No, fresh cucumbers do not freeze well.
