Crockpot Tuscan Bean Soup By Kelly Miller • September10,2013 • Updated January 27, 2020 • 11 Comments 3.7K Jump to Recipe Crockpot Tuscan Bean Soup – red bliss potatoes slow cooked with carrots, garlic, onion, Great Northern beans, and ham for this amazing soup! So… I guess I have kind of a weird question to ask you right now. You’ve made soup at home before, right? I mean like actually chopping up veggies (frozen counts, too), putting it in a pot with some broth and various seasonings, etc. Or maybe just throwing a ton of ingredients in the Crockpot and letting it simmer all day. You’ve done that, right? Let me back track a minute. Up until about two years ago, I had never made soup before. Like… in my life. I never really considered myself a person that would eat soup, besides chunky New England clam chowder from the can. When I was in college, I lived on that stuff. Oh and definitely ramen, of course. I had perfected the art of making ramen noodles in the microwave at my dorm – yes people, it can be done. No, do not expect the directions to appear here. 🙂 Anyway, I guess I really wasn’t all that convinced that making soup on the stove would really taste all that much different from what you can get in the nicer canned versions.Dead. Wrong. Paul had told me how much he liked soup and I tried making some myself because of how healthy most soup recipes are. Amazing. So if you haven’t tried making soup at home yet, first of all it’s WAY easier than you think it is, and second of all this Crockpot Tuscan Bean Soup is a great one to start with. It’s such a great fall soup, too – the color and the flavor – yum! I’d love to know what the first soup was that you ever made! Leave it in the comments. 😀 If you liked this Crockpot Tuscan Bean Soup recipe, leave a comment and a rating below this post! Kim Cunningham says September 10, 2013 at 3:18 pm Homemade soup is one of the best things ever! I didn't eat homemade soup at home as a child…cooking was not my mom's thing. When I grew up and married, I began to cook and cook. I adore homemade soups and they are perfect for the chilly months. I could live off soup for winter, with a chunk of crusty bread. I'm going to try this soup! Reply

Thrifty Frugal Mom says October 8, 2013 at 11:08 pm Kelly, made this for dinner tonight and we loved it! It was so simple, good and inexpensive too. I had some ham broth to use up so I used 2 c. of that instead of the chicken broth. Definitely will make this again! Reply
