Top this amazing cake with a cinnamon buttercream frosting, and you have a perfect dessert recipe for brunch, too! When thoughts of summer come to mind, I think of a relaxing day at the beach or camping in the woods enjoying nature. Not having much to worry about, just taking in the beautiful sights around me. BUT… I’m a Mom. It is the one aspect of my life that I am MOST proud of. Being a Mom to these three little boys is the most fulfilling, joyful, frustrating, and stressful job I’ve ever had. Notice the dichotomy there? It’s SO true and I’m sure those of you Mostly Homemade Mom followers who are parents can totally identify with me. These years lately when I think of summer, I admit I get totally stressed out! All three of them home with me, all day every day. The days of complaining that it’s too hot to play outside will be here before I know it and they will be bored and begging me to give them fun things to do. And I know, however much I aim to have an awesome activity planned each day, I will fail that goal most days. A popsicle, some dollar store bubbles, and a shove out the back door – have fun kids! And you know what? They will have lots of fun. Those days when I feel like I’m pulling my hair out with these active boys, I’ll need a Mommy break. Sitting back on the couch, enjoying a piece of this Chai Latte Cake and a hot cup of TAZO® Chai Latte from my Keurig® brewer here at home… that sounds like the perfect vacation moment to me! This delicious Chai Latte Cake turns traditional coffee cake and gives it a fun tea cake twist! Filled with spiced cardamom, cinnamon, ginger, and cloves and topped with a homemade cinnamon buttercream frosting – it tastes just like a Chai Latte in dessert form!
