This yummy Ambrosia Cheese Ball uses only 4 ingredients! Cream cheese, strawberry fruit spread, ginger, and coconut - spread on gingersnaps and vanilla wafers for an awesome holiday appetizer!
It's not officially Thanksgiving in our house until we've watched the Charlie Brown Thanksgiving special at least half a dozen times. My kids absolutely love those movies for all of the holidays, and Thanksgiving is one of my favorites. It totally reminds me that the dinner doesn't need to be perfect, the table setting doesn't need to be beautiful, all that matters is that the people that I love most in this world are all in the same room with me sharing a meal!
Wesley is our Kindergarten kid this year and I was so pleased to find an adorable letter in his "take-home folder" on Monday. Apparently on Friday, they are having a Thanksgiving "feast" along with the other kindergarten classes. They will be weaving placemats and decorating costumes. Oh, and the menu? Take a look:
Friendship fruit salad
He has to bring in 1/2 cup of cut up fresh fruit and they will all be contributing to a big fruit salad. I mean seriously, HOW ADORABLE IS THAT?! I'm hoping his teacher texts us some pictures because I'm totally jealous that I can't be there and see the cuteness in that room.
I'm a FIRM believer that yummy food and big meals for family and friends do not need to be super complicated and take a lot of time in the kitchen to pull off. This Ambrosia Cheese Ball appetizer absolutely fits the bill! Only four simple ingredients, plus gingersnaps and vanilla wafers for spreading. Just mix ingredients:
Chill mixture. Then roll into coconut:
And you're ready to serve a delicious appetizer! Feel free to substitute the raisins with dried cranberries if you prefer as well.

Ambrosia Cheese Ball
Cream cheese blended with strawberry fruit spread, ginger, and raisins and rolled in coconut; served with vanilla wafers and gingersnaps.

16 oz cream cheese, room temperature
1/2 cup Smucker's Fruit & Honey Strawberry Fruit Spread
1/4 teaspoon ground ginger
1/3 cup raisins
1 cup sweetened coconut
gingersnaps and vanilla wafers
Place cream cheese, fruit spread, and ginger in a medium sized bowl. Blend with a hand mixer until well combined.
Stir in raisins. Cover and refrigerate at least 3 hours.
Spread coconut evenly onto a plate. Remove chilled cheese mixture and gently form into a ball with your hands. Roll cheeseball into coconut pressing it into the cheeseball as much as possible.
Place on a serving plate with a cheese spreader, gingersnaps, and vanilla wafers. Refrigerate leftovers.
This cheese ball reminds me of sweet ambrosia salad and it's perfect spread onto the gingersnaps or vanilla wafer cookies! Set it out this Thanksgiving for guests to nibble on before the meal - it will disappear in no time, I'm sure!
