So, we’re a week into the new school year here and I’ve already been complained at by my newbie lunch-staying first grader that I don’t send him with anything “different.” You’ve had 4 days of school, kid – give me a break! I actually stocked up on some cool snacks and drink boxes for him. Besides the point that all summer he’s LIVED on ham & cheese sandwiches because it’s honestly one of his favorite things to eat! So much so that about mid-way through the summer I taught him how to make them for himself. I figure, that can only help once the baby is here, too! In all honesty, I can’t blame the kid when he goes to open his lunchbox and, while he may love everything in his, sees all the yummy things everyone else brought and he wants! I do remember being sick of sandwiches for lunch as kid, of course I don’t think it was 4 days into the school year… but still, I concede. This delicious Lunchbox Fruit Salad is absolutely perfect as a sandwich alternative. I really love fruit salad, but most of the recipes I come across are more like dessert with pudding mixes and whipped cream in the ingredients. Not exactly the best choice to get your kids all sugared up for an afternoon of learning! This one is great, with no added sugar, and you can control the types of fruits included. Honestly, I will have to make a double or triple batch of this fruit salad if I every intend on using it for lunches. We ate the entire batch up before trucking the boys to soccer practice one night – it was THAT good!
