Cranberry Orange Cookies

December 12, 2012

I'm so excited to be posting this recipe for two reasons. First, this is my absolute favorite cookie to make at Christmas. And second, I was privileged to be a part of The Great Food Blogger Cookie Swap this year!

Three dozen yummy cookies to eat all by myself (ok, maybe I shared a few) that I didn't even have to make!! It was seriously like Christmas. Kim from Love U Madly sent me Chocolate Chip Rice Krispie Treat Cookies which were so fun! Christina from Stracciatella sent along Salted Caramel Chocolate Chip Cookie Bars, so decadent and gooey. And Nik from A Brown Table made Rose & Cardamom Cookies for me, I wish you could smell them. Heavenly! All three will be posting the recipes for those cookies today also, so be sure to visit them!

Of course I chose my favorite Cranberry Orange Cookies for the swap. I'm not sure who first thought up pairing orange and cranberry together, but it's genius! These cookies are delicious and addicting!

Cranberry Orange Cookies
makes 36-48 cookies

1 cup butter, softened
1 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon grated orange zest
2 tablespoons orange juice
2 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
6oz craisins

In a large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the egg until well blended. Mix in orange zest and orange juice. Combine flour, baking soda, and salt and gradually add to mixing bowl. Mix in craisins until evenly distributed. Drop dough my rounded tablespoonfuls onto ungreased cookie Sheets. Bake at 375 for 7-9 minutes until the edges are golden. Cool on wire racks.
