Soup Week: Can Can Taco Soup

I hope you're not sick of all these soups I've been bringing to you this week! So far we've seen Simple Spinach Tortellini Soup, Crockpot Loaded Baked Potato Soup, Tomato Basil Parmesan Soup, and yesterday's super fun Alphabet Soup. I can't WAIT to share with you today's soup!

This soup ROCKS! Seriously. It's probably the easiest soup you'll ever make, but it's jam packed with flavor. I also love that all the ingredients are canned so you can always have the ingredients on hand to whip up in a pinch. I made this in the slow cooker, but I've given stove top directions below as well. 

Can Can Taco Soup
adapted from 365 Days of Slow Cooking

14oz can Rotel (or use diced tomatoes for less heat)
15oz can chili, I used Hormel all beef chili
15oz can corn, undrained
15oz can black beans, drained and rinsed
8oz can tomato sauce
1 packet taco seasoning
shredded cheddar
sour cream

Crockpot directions:

Combine all ingredients in slow cooker along with a 15oz can's worth of water. Cover and cook on low 4 hours. 

Stove top directions:

Combine all ingredients in stock pot. Bring to a boil, reduce heat, and simmer 25 minutes.
