05Nov2012Soup Week: Simple Spinach Tortellini Soup Any fellow soup lovers out there? We sure are! There’s nothing better than settling down with a warm bowl of soup on these chilly fall days, wouldn’t you agree? All week long I’m sharing some delicious soups with you, I hope you’ll stick around. This Simple Spinach Tortellini Soup is so easy to throw together. It has a tomato soup base and the addition of the spinach and frozen tortellini really make this a meal. It freezes wonderfully! Simple Spinach Tortellini Soup adapted from Budget Bytes 4 teaspoons minced garlic (or 4 cloves) 2 tablespoons dried, minced onion 28oz can tomato sauce 28oz can crushed tomatoes water 1 teaspoon dried basil 1 teaspoon dried oregano 1 tablespoon ground black pepper 12oz frozen cheese tortellini 4 cups fresh spinach, roughly chopped kosher salt to taste parmesan cheese Mix together garlic, onion, tomato sauce, crushed tomatoes, basil, oregano, pepper, and 28oz can of water. Bring to a boil. Add frozen tortellini and spinach, reduce heat to medium, and continue to cook for 10 minutes. Soup is done when tortellini is warmed though and spinach is wilted. Add salt as needed and serve with crusty bread and some parmesan cheese. Need more soup ideas NOW??
