As our boys get older, I’m very quickly realizing that my normal recipes are going to need to be doubled. In some cases, tripled. These kids drive me nuts, though, because they’ll go through days where I can barely get them to eat a sandwich, and then other days where they literally eat the entire cabinet and are still hungry after! I’m happy to report they absolutely loved this recipe for sweet-and-sour pork! One casserole dish made plenty for all of us, which is somewhat of a challenge with these growing boys. Another challenge I’ve been having recently with dinners is timing. I either underestimate how much time it takes to prepare dinner and we’re all cranky and starving and eating snacks until it’s ready. Or I overestimate how long it takes and it’s ready hours before dinner time (some slow cooker recipes can be this way). I’ve been really loving testing out some new casserole recipes to share with you. Some take a few minutes to prepare, and generally bake for around 30 minutes. A no-brainer for me to try and figure out when to start dinner! Plus, casseroles are great for putting away leftovers, or even freezing individual portions for quick dinners. I actually used old lunch meat containers and packed some rice, pork, peppers, and pineapple in a few containers to freeze for just that reason! Working in batches, sear pork chops on each side until lightly browned, only a few minutes. Arrange browned pork chops in a the bottom of a 9 x 13 inch casserole dish. Drain pineapple juice into a medium sized bowl. Whisk in ketchup and apple cider vinegar. Spread pineapple chunks and green pepper over pork chops. Pour sauce over dish. Bake at 350 for 20 – 30 minutes, or until pork is no longer pink inside.
